On Wednesday 20 March, join us as part of the Melbourne Food and Wine Festival for a dining experience that pushes culinary boundaries. Head Chef Georgina Dent and Scott Pickett have used AI innovation to curate a four-course masterpiece that transcends tradition. The premise? A decade of Estelle menus analysed and distilled by AI artistry into a one-night-only menu. And here’s the twist: no chef interference with the menu. What you taste is the purest expression of Estelle, forever etched in the archives of dining history. Each dish celebrates March’s seasonal delights, harmonising flavours with AI selected Victorian wines.
Each course is presented by AI with AI interactive elements, an AI playlist, AI generated graphics and more. AI even wrote this! A real-life human AI expert will be on hand to impart some of their knowledge on the future of AI on our guests.
Disclaimer – the food will also be cooked by humans as Estelle is yet to invest in a robot chef.
